Meet Gavin Wise. Gavin began working with Drago in the early nineties as a pastry chef for Drago Ristorante in Santa Monica. In loving what he did along with his talents, Celestino decided to bring him aboard to open Drago Bakery on Pico Blvd where more business’s were built. At that point, Gavin was running the bakery that was relied upon by many local restaurants, hotels, and airline companies. With the appreciation of the hard work and great product from the Drago Bakery, more opportunities for involvement with the airlines and offsite catering were presented expansion was necessary so in 2004 Dolce Forno was born to provide endless opportunities for the company and for Gavin. In opening this location it now had the potential to cater to thousands and the talent to create everything from a classic baguette to any pasta imaginable.
